Mexican Quinoa

As I prepare my last detox for 2018, I decided to try new recipes to add, so the detoxing process will not feel like a routine.  I found this recipe while browsing pinterest and gave it a try.  AWESOME!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

One Pan Mexican Quinoa

INGREDIENTS:

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced ( I used 2 tablespoons of the jar minced)
  • 1 jalapeno, minced (I used a sprinkle of cayene pepper)
  • 1 cup quinoa
  • 1 cup vegetable broth (I used one cup of water and 1 vegetable bouillon cube)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 cup corn kernels, frozen, canned or roasted
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Kosher salt and freshly ground black pepper, to taste
  • 1 avocado, halved, seeded, peeled and diced
  • Juice of 1 lime
  • 2 tablespoons chopped fresh cilantro leaves

DIRECTIONS:

  1. Heat olive oil in a large skillet over medium high heat. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, about 1 minute.
  1. Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes. Stir in avocado, lime juice and cilantro.
  2. Serve immediately.

SEW GOOD SANGRIA

This past weekend my sewing group had a zipper workshop to review techniques as we prepare our spring/summer collections.  Since this was an all morning workshop, we decided to bring breakfast refreshments.  I brought sangria and blinged out the wine glasses for everyone.   Sometimes sewing can be stressful when your creative thoughts are blur, so the ladies we happy to have a glass to sit by their machines as we worked.  By then end of the workshop…well lets just say we may need to retake this zipper workshop….LOL

SEW GOOD SANGRIA

  • 1 box of 5 liter box wine
  • 1 liter of ginger ale
  • 1 liter of mango agava
  • 1 cup of flavor rum
  • 1/4 cup of sugar
  • 1 apple
  • 1 orange
  • 1 lemon
  • 1 cup of strawberries
  • 1 cup of pineapples
  • 1 cup of mangoes
  • 2 cups of peaches

Let the mixture sit overnight in the fridge and enjoy the next day.
